Sourcing local ingredients is central to what we do and integral to our plans to focus on seasonality, sustainability and reducing our carbon footprint.
A huge part of this will be to grow our own and rear our own – increase the fruit and vegetable yields on our farm, Al Eile, and over the next few months introduce rare breed pigs and Dexter cattle too.
